You can use whatever pasta you want, the trick is the sauce which is made with roasted beets. You can roast the beets yourself or buy them already roasted. For the vegan version blend 4 medium sized beets with 1/2 cup coconut cream (or coconut milk). Add more coconut cream if it’s too thick. Once it’s blended into a sauce add into a pan with a little olive oil and bring to a low simmer. Season with salt and black pepper. I usually add a little bit of my pasta cooking water into the sauce pan at the end and toss in the noodles. Serve with fresh basil.  For the non-vegan version blend the roasted beets.
