A recipe that makes me think of sitting on a beach in Mexico, drinking margaritas and eating some delicious ceviche😍
Flipping yummy halibut ceviche
1 lb halibut filet, cut into 1/2 inch cubes
8 Tbsp fresh lime juice - lime for garnish
5 Tbsp fresh lemon juice
2 tomatoes
1 small onion diced finely
2 jalapeños, seeded and chopped
2 peppers (red, orange or yellow) seeded and chopped
2 avocados - seeded, chopped (or sliced to use as a garnish)
3/4 c cilantro chopped
1 tsp olive oil / additional for drizzling
Romaine lettuce - for garnish or used as a base for ceviche salad
Place the fish in a large glass bowl and add lemon/lime juice. Cover and let it marinate for at least an hour in the fridge until the fish is opaque, then drain the juice. Put tomatoes, onion, peppers, Chile’s, cilantro, avocado, oil in a large bowl and toss gently. Add salt/pepper to taste and drizzle olive oil. 🤩#skaterfriendlymeals #kwancancook
