For Thanksgiving, I’m doing a week of my favorite side dishes – because we all know Thanksgiving is secretly all about the sides, right?? I’m starting with these Twice Baked Sweet Potatoes, which you can make in advance and reheat while the turkey rests. They’re roasted sweet potatoes that are scooped out, mixed with caramelized shallots, fresh thyme, and butter and spooned back into the potato skins, with lots of melted Taleggio cheese on top.
