When Editor in Chief @notesfromacook sat down at Trattoria Sostanza in Florence last year and ordered the bistecca alla Fiorentina, they also brought out this chicken—spoon-tender, bronzed and sizzling in a small dish of brown butter, and served with a squeeze of lemon.
