My beautiful raspberry coconut-crumble soufflés, all made by me after a demo by the chefs @saucebythelangham (and a lil help and supervision here and there 😛). Was genuinely surprised at how easy it was to make a soufflé, “almost fool-proof” said the Roux himself 👌🏼 . Fun things I learned whilst making these: - Fresh eggs actually don’t produce the best soufflés. The protein reacts differently after a few days and helps with the rise! - Opening the oven is actually not a problem. It only mattered back in the day when ovens were not electric. - Chefs are all superstitious, and they believe that you’re supposed to brush butter from bottom to rim. It’s supposed to help the soufflé rise... .
