My husband *might* have looked at me a little crazy when I said I was cooking zucchini and sweet potatoes as a base for our taco mix but he was won over upon first bite!⁣ ➖⁣ To make this yourself roast two zucchini and one sweet potato with your favorite seasonings. I personally use @flavorgod Everything seasoning and instead of roasting I threw them in the air fryer at 370° for 17 minutes, stirring halfway.⁣ ➖⁣ Divide those veggies into four servings then top with 3-4oz of ground taco meat. **for an extra way to add veggies I diced spinach up and mixed it into the taco meat.
