INGREDIENTS
4 medium tomatoes, diced OR one 14 oz can diced tomatoes, drained
2 Tbsp olive oil
2 Tbsp balsamic vinegar
2 cloves of garlic, minced
1 Tbsp Flavor God ITALIAN ZEST
1 small jar (8 oz) artichokes, liquid drained
1/2 cup Kalamata olives, pitted and liquid drained
1 Tbsp ghee
1 1/2 lbs bone-in, skin-on chicken thighs
Salt and pepper
Garnish: fresh basil, chopped
INSTRUCTIONS
Preheat oven to 350º F.

In a mixing bowl, combine olive oil, balsamic vinegar, garlic and Flavor God ITALIAN ZEST. Next add diced tomatoes, artichokes and olives. Stir to combine and set bruschetta mixture aside.

In an oven-proof skillet, heat ghee on stovetop over medium high heat. Season chicken with salt and pepper, and place thighs in hot skillet skin side down. Cook only that side about 5-7 minutes, or until golden. Turn thighs over so skin side is up and season each with a shake or two of Flavor God ITALIAN ZEST.

Immediately pour the bruschetta mixture over the chicken. Transfer skillet to center rack of 350º F oven. Bake until chicken is cooked through, about 25-30 minutes.

Carefully remove hot skillet from oven. Garnish with basil and enjoy!
