These baseball-sized Georgian dumplings hold a deeply savory mix of beef, pork shoulder, garlic, onion, Georgian red pepper and fresh cilantro. The dumplings, called #khinkali, are one of the star dishes at the renovated restaurant Pirosmani, in Sheepshead Bay, Brooklyn. “At least 3 or 4 people have to taste the khinkali” before they go out, said Manuchar Katchakhidze, the restaurant's owner.
