Ocean trout hanging to dry in the ageing cabinet of the @fishbutchery to make sausages. The process makes the fish flavour come to the fore, and taste meatier (pic 2 shows the ocean trout and bar cod sausages in question) . I’m so fascinated with everything @mrniland is doing with his Fish Butchery. And @rex.goldsmith, you’d love it! I do wish I had an actual kitchen to cook the fish (and the sausages) from here.
