It’s a good day when your lunch is pink ?? Today I’m having organic beetroot courgetti with toasted pumpkin seeds and roasted peas ? The full recipe is on my stories ?? I am lucky enough to have access to a local organic store where I do my weekly food shop, although organic food is widely available now in most shops and supermarkets. As a plant-based eater and a conscious consumer I have learnt a lot about soil health over the past year. Soil isn’t cool or glamorous but it’s pretty damn important. Soil is the heart and soul of our planet – we can’t live without it.
