Tuesday: Chilaquiles ?? we’re in Cabo San Lucas, Mexico right now with our wonderful friend @nocrumbsleft who convinced me to take a break from cooking this week! A classic Mexican breakfast dish of crunchy tortilla with either salsa roja or salsa verde, topped with a fried egg and avocado and sometimes chicken or beans. I actually made this last year in Shanghai and since trying it here realised mine is pretty good ?? but maybe I was a bit shy with the salsa verde ?
