Sunday: Eggs Florentine, that’s with spinach instead of ham as in Benedict, with homemade hollandaise sauce but with some yuzu instead of lemon and on toasted brioche instead of the muffin ❤️?????? I’ve always got time for hollandaise on a Sunday ?? (recipe for fool proof hollandaise is in my book)

In French cooking, anything served on a bed of spinach is called à la Florentine. The origin comes from Catherine de Medici, a Florence born noblewoman who then became Queen of France in 1547 and loved spinach! So much that eating foods with spinach became known as of Florence.
