Buried deep within the earth, groundwater — a largely hidden resource — supplies 25 to 40% of global drinking water. Agriculture uses about 70% of water withdrawn from aquifers. Every aquifer arranges itself differently, but all are unimaginably complex and incredibly fragile. Among the most vulnerable aquifers are those underlying the desert basins of the American Southwest. Arizona’s Sulphur Springs Valley is one such basin. Around the turn of the 20th century, when sulfurous water was discovered bubbling out of the ground, cattle ranches and homesteads began to proliferate there. But by the late 1990s, the beginning of what would turn out to be a 19-year-and-counting drought, only about 15,000 acre-feet of water were estimated to have percolated into the aquifer each year, while 100,000 were being pumped out. And it kept getting worse. While on assignment for @nytmag, @lucasfogliaphoto photographed cattle owned by Coronado Farms, which runs the largest dairy and feedlot in the valley. Industrial agriculture like this has descended on this remote region, depleting its aquifer — and leaving many residents with no water at all.
