A new addition to the menu at @189bydominiqueansel, where our desserts pay tribute to kitchen foundations and the lessons young cooks learn early on. This one’s called “On The Half Shell,” inspired by another essential chef skill - shucking oysters - made with hand-painted dark chocolate “shells” filled with sea salt ice cream, lime sorrel gelée, and mango jam, topped with oat crumble “sand” and a single perfect pearl. Flavors of land and sea that remind me of those summer days spent shucking fresh oysters. To be eaten with your hands.
