Behind every great restaurant is a finely tuned team — and hours and hours and hours of work. Our photographer @jamesestrin wanted to know what goes on behind the kitchen door of a fancy restaurant, the sort of place where people dress up for the meal and the pork chop costs $55. He wanted to document the work that goes into delivering that sort of experience. “Not so much the food,” he said. “I wanted to see the people and the culture they share, backstage.” So he spent 6 days at @craft_newyork, the chef @tomcolicchio’s Manhattan flagship restaurant, on East 19th Street in Manhattan. The work starts very early in the morning (4:30 am) and ends late at night (12:59 am). What surprised him about the experience, he said, “was the sheer physicality of the labor, and the precision of it.” Craft is by no means a theatrical restaurant. The food is simple and simply served. But simplicity in a restaurant, @tomcolicchio has written, does not mean simplistic. Every aspect of a meal at Craft reflects a near-fetishistic desire for perfection. “It was amazing to me,” @jamesestrin said, the degree to which “each role in the restaurant depends on someone else doing a job perfectly, and how if someone doesn’t, everything falls apart.” Swipe left to see some of his photos, and visit the link in our profile to read the full essay.
