MATCHA DARK CHOCOLATE VEGAN CAKE
Makes one 8- or 9-inch cake; serves 12 (Double recipe for 2-layer cake)
Coconut oil cooking spray
1 ripe banana, mashed well
3⁄4 cup organic sugar
3⁄4 cup unrefined coconut oil
1 teaspoon organic vanilla extract 1 cup water
21⁄2 cups gluten-free flour (such as Bob’s Red Mill gives the best results)
1 cup almond meal flour
2 tablespoons cornstarch
1⁄4 teaspoon sea salt
1 tablespoon matcha powder, sifted 1 teaspoon baking soda
1 tablespoon apple cider vinegar
DARK CHOCOLATE COCONUT FROSTING FOR TWO-LAYER CAKE (Frosting yields enough for two cakes)
23⁄4 cups confectioners’ sugar, sifted 11⁄2 cups dark unsweetened cocoa
powder, sifted
1⁄2 cup plus 2 to 3 tablespoons coconut milk (canned or drinkable works), depending on how thick or smooth you like it — full recipe in my new book! #kintsugiwellness #vegan
