I have spring hikes and healthy breakfasts on my mind! This is what I’m cooking up. Baby Mac’s Organic Granola⠀
Serves 8; Makes about 9 cups⠀

1 cup coconut oil⠀
¾ cups agave syrup⠀
2 teaspoons vanilla extract⠀
2 teaspoons ground cinnamon⠀
1 teaspoon coconut extract⠀
¼ teaspoon salt⠀
3 cups old-fashioned oats⠀
1 cup macadamia nuts, coarsely chopped⠀
1 cup shelled natural pumpkin seeds (pepitas)⠀
½ cup flax seeds⠀
½ cup chia seeds⠀
1 ½ cups unsweetened shaved coconut⠀
1 cup dried cranberries⠀

Position the rack in the center of the oven and preheat to 325° F. Combine the coconut oil, agave, vanilla, cinnamon, coconut extract, and salt; whisk until well blended⠀

Combine the oats, macadamia nuts, pumpkin seeds, flax seeds, and chia seeds in a large bowl; stir to blend. Pour the coconut oil mixture over the oat mixture and stir to blend thoroughly. Spread the mixture on a large rimmed baking sheet. Bake until the mixture begins to turn golden brown, stirring frequently, about 30 minutes. Remove from the oven and mix in the shaved coconut and cranberries. Cool completely on the baking sheet and store in an airtight container. Enjoy!
