I love a great Caesar. Here’s my take on the classic salad. I had to skip the anchovies for a special someone that won’t go near them! This Caesar is a staple in my house. Make sure it is really cold when you serve it. Half this recipe if you are only using 1 head of Romaine. Enjoy! Caesar salad with homemade croutons⠀
Serves 10⠀

2 large egg yolks⠀
4 teaspoons Dijon mustard⠀
4 cloves garlic, peeled and pressed⠀
1 teaspoon hot sauce⠀
2 teaspoons Worcestershire sauce⠀
1 cup extra-virgin olive oil⠀
1 cup grated Parmesan cheese,⠀
plus more for garnish⠀
Juice from 1 lemon⠀

Flaked salt and coarsely ground black pepper, to taste 2 heads romaine lettuce (or 6⠀
romaine hearts), chopped 4 cups croutons⠀
⠀
In a large bowl whisk together egg yolk, mustard, garlic, hot sauce, and Worcestershire sauce. While whisking constantly, slowly pour in olive oil. Keep whisking until creamy and smooth.⠀

In a large serving bowl stir in Parmesan cheese and lemon juice. Be sure to taste and add salt and pepper if desired. Top with chopped romaine but do not mix. Chill until ready to serve.⠀

When ready to serve add additional Parmesan cheese, black pepper, and croutons, tossing to coat. Serve immediately.
