This very orange dish is called carrot soufflé, but don’t let its name intimidate you. Think of it as more of a casserole. Most ingredients are pantry staples that you’ll already have on hand, but the star ingredient is essential. @nytfood recommends using the sweetest carrot you can find. Pair this dish with a salad for a lunch or a light dinner any time of year. The dish, photographed here by @rikkisnyder, comes to @nytfood from Sam Beall, the former proprietor of @blackberryfarm in Tennessee. Visit the link in our profile to get the recipe.
