COCONUT CHIA PUDDING
2 tablespoons chia seeds
½ cup coconut milk, unsweetened
1 tablespoon coconut flakes, unsweetened
⅛ teaspoon cinnamon
½ teaspoon pure vanilla extract (or ½ vanilla bean, scraped)
1 teaspoon maple syrup
¼ cup blueberries*
2 tablespoons pepitas
2 tablespoons sliced almonds
INSTRUCTIONS
1. Stir together chia seeds, coconut milk, coconut flakes, cinnamon,
vanilla, and maple syrup in a small bowl or jar.
2. Cover and set aside for at least 10 minutes, or overnight.
3. Before eating, top the pudding with a layer of the berries and
sprinkle the nuts on top.
