Chickpeas are a wonderful source of protein, iron, magnesium, fiber, and have fabulous research supporting their blood sugar regulating powers. This, coupled with the liver cleansing qualities of beets make this hummus virtually a superfood. If you’re not seduced by the color, then hopefully the promise of a delicious, ready-to-go snack will do the trick!

PRETTY IN PINK | serves four
1 cup cooked chickpeas, drained and rinsed
1/2 cup beet, grated
1 garlic clove, peeled
2 tablespoons tahini
1 tablespoon olive oil
1 tablespoon fresh lemon juice
1⁄4 cup fresh cilantro (coriander), chopped Black pepper and sea salt, to taste

1. Place chickpeas, beet, garlic, tahini, olive oil, and lemon juice in the bowl of a food processor or blender jar. Pulse or blend.
2. Drizzle the oil through the feed hole with the motor running. If needed, add a little water to loosen up the mixture.
3. Transfer to a serving bowl and sprinkle with cilantro, salt, and pepper. Serve with fresh veggies.

Serving Suggestion:
2 cups carrots (or other fresh vegetables such as cucumbers, red peppers, or celery) or eat with any veggies.
