Follow her ? @cafedelites INGREDIENTS BROWNIES: 1 cup quick oats 1 can organic black beans (1 cup) rinsed and drained really well ½ cup organic unsweetened cocoa powder ½ cup granulated sweetener/raw sugar 2 tablespoons maple syrup or agave (can be sugar free) 2 tablespoons light butter/coconut oil, melted 1 teaspoon vanilla extract 1½ teaspoons baking powder ½ teaspoon baking soda Pinch sea salt 1 can organic pitted cherries in natural juice, divided ¼ cup reserved cherry juice (from canned cherries) Optional Frosting: 2 tablespoons cocoa powder 1 tablespoon sweetener/sugar of choice 1 tablespoon hot water to mix . INSTRUCTIONS Preheat oven 200C | 390F. Spray a 8x8 inch baking pan with cooking spray and put aside. Rinse black beans under warm water until the water runs clear. Drain well and gently squeeze out any excess liquids. Throw ALL ingredients into a food processor (with only ½ the can of cherries) and blend until smooth: about 2 minutes. Wipe down the sides with a spatula and blend for a further minute. Fold through remaining cherries (chopped or broken in half). The mixture will be THICK! Do not add extra liquids. Pour into prepared pan. Bake for approx 20 minutes (depending on your oven) until a toothpick inserted into the centre comes out clean. (Be very careful not to over bake these or they will become dry). Once cooled, gently cut into 16 bars.
