Oats and Spelt Flour

Yields 2
Ingredients
1/4 cup (4 tbsp/24g) oat flour - make your own by blending oats in the food processor
1/4 cup (4 tbsp/30g) wholemeal spelt flour
1/2 cup (120ml) milk - I used unsweetened almond milk
2 tbsp stevia or other sweetener
1.5 tbsp coconut oil, melted - or any type you prefer
Pinch of salt
1/4 tsp vanilla extract

Instructions
Mix everything in a bowl. If the batter is lumpy use a hand held blender to smooth the batter out.
Heat a little bit of oil in a frying pan.
Take off the heat then pour in 1/2 the better to make one crepe. Tilt the pan to spread the crepe as thinly as possible.
Cook for a couple of minutes on each side.
Transfer onto your serving plate then top with your filling of choice. I used natural cashew butter, strawberries, pistachios and a drizzle of dark chocolate.
