Some people enjoy raw oysters with simply a squeeze of lemon, a dash of hot sauce, and a splash of mignonette made mainly of vinegar, pepper, and shallots. I enjoy them this way as well. Fresh, simple, and delicious. But the progressive minded cook in me is always looking for innovative ways to enjoy a classic dish.

This platter of oysters by @vansgoodeats is an example of the type of creativity and ingenuity I like to see in my meals. A truly edible work of art! Thanks Van! Love this one!

The BEST RAW OYSTER ? : #shigoku oyster, #tobiko, #ikura, cilantro, scallions, and fish sauce vinaigrette (lime juice, fish sauce, chilies, garlic @Flavorgod Seasonings, sugar, Tabasco, rice vinegar). ?UMAMI BOMB?. Tangy. Spicy. Savory. Sweet and salty at the same time with fresh cilantro.
