STRAWBERRY FIELDS SALAD | serves one
2 cups spring mix salad greens or baby spinach 1 cup strawberries, sliced and stems removed
1 nectarine, sliced*
6 mint leaves
2 tablespoons sunflower seeds
2 tablespoons walnuts

For Dressing:
3 tablespoons olive oil
1 tablespoon balsamic vinegar
Pinch of sea salt
1⁄2 teaspoon Dijon mustard

1. Place the salad greens on a plate. Top with sliced fruit and mint leaves.
2. Whisk all dressing ingredients together in a small bowl and drizzle over the salad.
3. Sprinkle the nuts and seeds over the top. *Note: Can substitute a peach, pear or mango.
Optional: You can also layer this salad in a mason jar for an “on-the-go” meal.
