Different varieties of lettuce growing in specially designed trays at AeroFarms, a #Newark-based company that grows vegetables and herbs in stacked beds indoors. Scheduled to open in a new location this fall, AeroFarms projects that its vertical farms will reap up to 30 harvests a year — that’s two million pounds of greens like kale, arugula and romaine lettuce. @bryananselm photographed the temporary space for The Times. “The soil, hay and manure smells were missing,” he said of the rooms he photographed, which were temperature- and humidity-controlled. “The only thing I can think of to compare it to was a reptile vivarium at a zoo.” #farming
