I couldn't resist to Australian stiff levain lobby any longer (@pipsbread @apieceofbread pointing at you guys) and tried to make things a little bit different than usual. I used @pipsbread formula for 100% whole wheat loaf with 100% hydration and addition of 25% sprouted rye berries. 4h autolyse, 5min slap&fold, 3h bulk, 12 h cold proofing. I love how the bread turned out. Still feel this slight acidic feel in my mouth (AC⚡DC). #realbread
