? Apple and Cinnamon Protein Muffins ? Since you all liked yesterday's picture so much, here is the recipe as promised! Preheat the oven to 180c/350f. Mix together: 1 cup oats, 1 cup almond flour, 2 scoops @team_optimum vanilla whey, 1/2 cup unrefined coconut sugar, 1/2 cup melted coconut oil, 4 eggs, 1 tbsp baking powder, 1 small apple chopped very finely, 2 tbsp apple pie spice, and 1/4 cup unsweetened almond milk. The apple pie spice mix can be substituted for a homemade mixture of cinnamon and nutmeg ? Thoroughly combine all the ingredients. Pour this into muffin cases and bake for around 15-20 minutes until cooked through. This mixture makes around 8 muffins. The frosting is a mixture of plain Greek yoghurt, honey and cinnamon.
