Vegetarian curry-
Half chopped red onion, 1 chopped garlic, tin of chickpeas & their juice, chopped mixed mushrooms, 1 sliced courgette, 2 peeled&chopped sweet potato, chopped green leaves from a cauliflower, half a jar pataks tandoori paste, 2 tsp curry powder, spinach, sultanas, 1 leek, grated ginger.

Cauliflower rice-
Blitz the cauliflower chunks, grate creamed coconut. Put cling film on top and steam in microwave for 7minutes.

Brinjal Bahji-
Half chopped onion, a chopped garlic, grated ginger, 3/4 tsp tumeric, 3/4 tsp ground cumin, 1/4 garam masala, 1 tsp curry powder, 2 tbsp tomato purée & water make into a paste.
Sauté 1 chopped Aubergine & add to paste with lemon juice & salt. Cook for 15.
