#RecipeOfTheWeek has to be this tasty Indian coconut chickpea curry as it's National Curry Week! Heat 3tbsp butter over a low heat, add 1 diced onion, 2 minced garlic cloves and 1 chopped dried chilli. Cook for 10 min until everything is browned. Add 1tbsp garam masala, 1tsp ground ginger and 100g cashews, and cook for a further few minutes. Turn the heat down and add 400ml coconut milk, 800g chickpeas and 500g defrosted spinach. Cook, stirring constantly, for another 10 minutes. Season, stir in 100g coriander, and serve with naan and rice. Serves 4. #LoveEveryMouthful
