It’s that time of year!!!! Who is ready for Pumpkin Spice everything?
🍂Try out this #EatingWithEllie Pumpkin Spice Energy Balls recipe below. Great on its own or with your PSL! 🍂
🎃1 cup natural peanut butter
🎃1/2cup pumpkin
🎃 1 tsp vanilla
🎃 1/2 cup maple syrup
🎃 1 1/2 cup oats
🎃 3 Tbsp almond flour (heaped)
🎃 2 Tbsp chia seeds
🎃 1 Tbsp pumpkin spice
🎃 3 Tbsp mini dark chocolate chips
Combine dry ingredients in a bowl. Mix together.
Combine wet ingredients in a separate bowl. Whisk together.
Mix wet ingredients into the dry ingredients. Once combined, mix in dark chocolate chips.
Put dough in the freezer for 10-15 min to harden up before rolling into balls. Store in fridge.
*Add more pumpkin or oats depending on how you like the texture 🎃😛 Enjoy!
