This simple honeydew watermelon radish salad is the perfect seasonal pairing with white fish or ahi tuna🤌🏻

Ricotta:
- 2 big spoonfuls of full fat ricotta
- salt
- drizzle of olive oil

Salad
- honeydew melon
- watermelon radish (thinly sliced)

Dressing:
- 1 pickled cherry pepper chopped
- chopped pistachios
- 1 tbsp rice vinegar
- drizzle olive oil

Spread the ricotta mixture over your plate in any shape you want, and layer the melon and then radish slices atop. Drizzle the dressing mixture over it and voila! Incredibly simple, yet feels gourmet✨
