Healthy Banana Chocolate Chip Muffins
🍌 3 ripe bananas / 1 1/3 cup bananas mashed
🍌 1/4 cup honey
🍌 1 Tbsp vanilla
🍌 1 Tbsp olive oil
🍌 1 egg
🍌 1/2 cup plain 0% Greek yogurt
🍌 1 Tbsp milk of choice
🍌 1 1/2 cup whole wheat flour
🍌 1 tsp baking soda
🍌 1/4 tsp salt
🍌 1/2 cup mini dark chocolate chips or semi sweet
Preheat oven to 350F.
Prepare & spray muffin cups with olive oil spray.
In a medium bowl: whisk together flour, baking soda, & salt.
In another bowl: mash bananas, then add the egg, honey, oil, vanilla, Greek yogurt, & milk.
Add wet to dry ingredients: mix together.
Fold chocolate chips in.
Fill muffin cups.
Bake for 20-22 min or until toothpick comes out clean.
Cool for a few minutes then remove from cups and cool on wire rack.
Store on counter for a few days and in the fridge for a week. Freezer for up to 3 months 😊
