Using up the last of the apples from last weeks picking expedition! Apple meringue this rendition! Chopped and diced 2lbs of apples, cook on medium for 20 minutes with a 2 tablespoons of water mixed with cinnamon, nutmeg and clove, all ground finely. I also added 2 tablespoons of dark brown sugar and bowl of the water. Allow to cool then whip up egg whites to make meringue. I add vanilla essence and powdered sugar while whipping. When it forms peaks layer in to apple sauce using a metal spatula. Sprinkle with Demerara sugar and bake for 5 minutes at 450 degrees. Allow to cool and yum..... ;-)
