Aloo-ve Indian food! Aloo gobi (spiced cauliflower and potatoes) accompanied with cheese, onion and chili parathas. So good! Trust me, you’ll want to make the parathas, and you can omit the cheese if you want to make it vegan. Perfect for #meatlessmonday !

Cheese, onion and chili paratha

Dough :
* 1.5 cups flour
* 1/4 teaspoon salt
* 1 teaspoon oil

Filling:
* 1 small onion, finely chopped
* 1 jalapeño or other green chili chopped
* Cup of cilantro chopped
* 1/2 cup of the following cheeses: mozzarella, cheddar, paneer but can use what you have available.
* 1/2 teaspoon chili powder
* Pinch of salt
* 4 teaspoons melted butter, ghee or oil

Make dough by combining flour, salt, and oil and slowly add 1/3 cup water to make a soft dough. Add a little more to make it pliable. Knead for about a minute or two and then have the dough rest for ~30 mins.

Combine all ingredients for filling and set aside.

Once dough is rested, divide equally into 4 portions, and roll into a 3-4 inch circle. Add some filling, pinch to seal and roll it out into a larger circle, about 6-7 inches.

Repeat the process for all the other dough portions.

Cook paratha in a heated skillet brushed on with a bit of butter, ghee or oil until golden and crispy. Eat it of course! 😆
