Shoutout to my sweetheart @jvn for my adorable hoodie - you can get one for your Valentine at JVNshop.co Meatball: 1lb. of lean ground turkey 1 egg 2 chopped scallions 1/3 medium onion chopped 1/2 c. of almond flour (I used coconut flour because that's what I had:) 1 tsp. salt Sweet and Sour Sauce: 1 Tbsp olive oil or sesame oil 1 Tbsp of Arrowroot powder 1/2 c. of pineapple juice 2 Tbsp of soy sauce 1/3 c. of no sugar added ketchup 1/2 c. of swerve sweetener (you can use real sugar too) 2 cloves of minced garlic 2 tsp of grated ginger Combine meatball ingredients and use your hands to make 1.5 inch balls. Put on parchment paper and bake at 400 degrees for 20 mins. In a saucepan put oil and add garlic saute for a minute. In a mixing bowl combine soy sauce, minced garlic, soy sauce, sugar, ketchup and pineapple juice. Mix well and put the ingredients into the saucepan on low heat. Stir occasionally and add arrowroot for thickness. When the meatballs are ready, remove from parchment using tongs and gently toss into sauce. Sprinkle chopped scallions and sesame seeds for garnish.
