“It’s very difficult...to literally put something in the oven and watch it burn,” #FWBNC @Tavel19 admits of his Basque cheesecake. But he resisted the urge to pull it out of the oven, and you should too—that deeply browned top is the whole point. The darker it gets, the richer and more caramelized the flavors become. (No, it doesn't get bitter.) Oh, and did we mention? No water bath required and there's no risk of a cracked top. It's the easiest and probably the best cheesecake you'll ever make at home.
