Food stylist @carolinagelen shows us how to make colourful cocktails using butterfly pea flower tea, from enlivening a classic gin and tonic to putting a vibrant spin on a mimosa. Ingredients (serves 4):
1 cup of butterfly pea flower tea
Juice of citrus of your choice: ½ lemon or ½ grapefruit or 1 orange or 1 lime
8tsp of simple syrup
120ml gin
Crushed ice
2 glasses of Champagne
2 glasses of tonic water
4 wedges of citrus of your choice
Fresh herbs of your choice to garnish

Method:
Brew 1 cup of butterfly pea flower tea – you can use tea bags, powder or dried whole butterfly pea flowers. The tea has a very mild flavour, you won’t be able to taste it in the cocktail.
Next, pour the citrus juice evenly into 4 glasses (2 gin glasses and 2 mimosa glasses) ­– make sure you get rid of all the seeds.
Add 1-2tsp of simple syrup – any type of flavoured syrup (vanilla, lavender, etc.), honey, maple syrup, or any type of sweetener ­– to each glass.
Add 30-60ml gin to each gin glass.
Fill each glass with crushed ice – this type of ice will slow the flow of the following liquid, which is essential for layering the cocktails.
Next, top the mimosa glasses with Champagne and the gin glasses with tonic water, leaving a little room at the top for the tea.
Top each drink with the butterfly pea flower tea, pour slowly in each glass and watch it change colour from electric blue to a mesmerising violet. That is what happens when the tea comes in touch with an acidic liquid, so using citrus juice is essential to get that effect.
Garnish each drink with a wedge of citrus and the fresh herbs.
