Heritage pork is a through line in a week-long cooking class taught by @chrifrapug at @trecontrade in Sicily. He marinates the pork for his ragù overnight, resulting in a super-tender meat sauce, paired with hand-rolled busiate pasta. We’ll be making this dish weekly until we can safely travel again.
