アリシア・ウィットさんのインスタグラム写真 - (アリシア・ウィットInstagram)「it’s that time of year again. and once again - my goodness gracious do i have a whole heck of a lot of sweet potatoes. as you can see from the photo of my garden, this is only 1/4 of the haul. they can stay in a few more weeks, at least, from what i’ve read - they may continue to grow a lot right now so i will leave the rest til after first frost. but that’s good - because it means i have time to get this first batch right. and like any good self respecting amateur farmer - i’m not too proud to ask for HELP 🆘 🍠 you see, sweet potatoes need to be *cured*  after harvesting in order to both reach maximum sweetness, and, to be properly sealed so that you can store them in a cool dry place and cook them as needed. i’m trying to cure these beauties. as you can see, they’re currently enjoying the warmth and humidity of a shower stall, with a portable heater and a bucket of water (i read this in an article). i’ve tried different methods each year and unfortunately, they’ve not worked for me - we end up with sweet potatoes that are softening and rotting in places, and i have to hustle and cook em all up, storing in the freezer (which means i don’t have the room i’d like for much else - including my frozen home grown pesto, and frozen kale and other greens harvested from the garden and stored for the winter). i just ordered a pressure canner finally, since sweet potatoes need that to be safely canned, but it’s out of stock for weeks and i don’t think it’ll arrive til end of october. so! calling all you sweet potato farmers out there. what do i do? advice and tips greatly appreciated! #southerngarden #nashvillefarm #sweetpotatovine」10月6日 2時02分 - aliciawitty
