When I saw @sohlae make this I knew I had to try it. It’s by far the best adobo I have tried! The eggplant absorbs so much of the flavor- pungency of the vinegar, saltiness of soy sauce all mellowed out with a bit of sweetness. Recipe calls for ground pork but I used plant based ground crumbles and the addition of crisp garlic chips is a game changer for sure. @jokoy may have to try this since he slammed vegetarian adobo in his, “Bahay Ko Ito” episode 5 telenovela.
