Ingredients:
- 4 oz egg whites
- 4 oz pumpkin purée
- 1 tsp vanilla extract
- 1/4-1/3 cup almond milk
- 1 tbsp maple syrup
- 1/2 tsp apple cider vinegar
- 28 g coconut flour
- 1 tbsp monk fruit sweetener
- 1 tsp pumpkin spice seasoning
- 1 tsp cinnamon
- 1/2 tsp baking powder
- 1/2 tsp baking soda
Instructions:
- whip egg whites and sweetener together with a beater until peaks are formed
- add wet ingredients and beat until mixed together
- add dry ingredients and beat until mixed together
- heat griddle to 400F and cook pancakes for about 2-3 minutes before flipping. Then cook for about 1-2 minutes on the other side
- assemble pancakes and add toppings (I used banana and granola)
