Cover and refrigerate. (The sauce can be made 3 days ahead. Keep refrigerated).⁠⠀ ⁠⠀ To make the burgers (4): ⁠⠀ ⁠⠀ Gently mix the ground sirloin, salt and pepper in a medium bowl. Form the mixture into 4 even patties. ⁠⠀ Arrange the bacon slices side by side in a heavy skillet. Pour the whiskey over the bacon. Cook over medium heat until the bacon is browned and crisp. Remove from pan and cover bacon to keep warm. Pour out excess grease. ⁠⠀ Add the meat patties to the skillet with the bacon drippings. Cook patties for 2 minutes over medium-high heat (do not press down patties with a spatula). Turn patties over and place 2 bacon slices, then slice the cheese atop each patty. Cover the skillet with a lid and cook the patties until the cheese is melted and the meat is cooked to desired doneness, about 2 minutes longer for medium-rare. Meanwhile, butter the hamburger buns and place in a toaster oven just until warmed through but still soft. Top each with a patty.
