What’s coffee’s ideal temperature?
“I love the coziness of hot coffee, but when we’re evaluating coffee in the lab, we wait for it to cool a bit before tasting,” says Carly Getz, a member of our coffee sourcing team. “A high-scoring coffee tastes great at every temperature we taste it, and often gets better as it cools.
“We first try it after it’s cooled for 14 minutes, when it’s about 135°F. Six minutes later (about 20 minutes after brewing), we taste it again, when it’s about 122°F. That's the point when I pick up the most acidity, sweetness, and clarity of flavor. Then we give it a final taste after about 28 minutes total, when it’s 111°F, not too far off from bath temperature. Personally, I think coffee tastes best when it’s approaching body temperature, when we almost form a kind of connection.”
