SURF AND TURF
with a Cajun Butter Steak & Scallops over Gnocchi

INGREDIENTS:
(Serves 2)
-Scallops
-Thick Cut Steak
-Gnocchi
-Butter
-Garlic
-Salt & Pepper
-Heavy Cream
-Mozarella & Parmesan Cheese
-Parsley
-Flour
FOR MARINADE:
-1/2 c. Soy Sauce
-2 tsp. Cajun Seasoning
-1/3 c. Olive Oil
-1 tsp. Thyme
-1/4 c. Brown Sugar
-2 tbsp. Whole Grain Mustard
-2 cloves Garlic

INSTRUCTIONS
First make the steak marinade with the marinade ingredients above. Remove 1/2 cup and set aside to make a glaze later.
Add steak to the marinade while you prepare the rest of the meal first.
Pour the gnocchi into boiling water. When they float to the top they are ready.
Add scallops to a sizzling oiled skillet. Sear about 2-3 minutes per side until they are crisp and golden on each side. Remove.
In the same skillet, add butter and scrape away the delicious brown bits left over from the scallops. These bits have the most flavor!
Add minced garlic.
Add cream and simmer.
Add mozzarella and parmesan cheese.
Salt and Pepper
Optional: you can add flour to thicken the sauce.
Remove 1/2 c. of the sauce and set aside. Will be used to top scallops at the end.
Now try some of the sauce or dip a bread in it, you won’t regret it.
Add gnocchi to sauce.
Add parsley or herbs of your choice on top.
In a small sauce pan add the reserved marinade with butter and simmer until it becomes a glaze. This will be super flavorful sauce!
Add the marinated steak to a sizzling medium sized skillet in medium high heat.
I like my steak medium. I cook it 3/4 minutes per side. Depending on the thickness of the steak. For this dish I had a 1 inch steak and cooked the first side for 4 minutes and the second side for 3 minutes.
Remove steak and add to cutting board. Let the steak rest for 5 minutes. This will allow the meat to reabsorb all the juices and you will achieve an evenly moist and flavorful steak.
Slice steak.
To serve: Add gnocchi to plate as the base. Top with sliced steak and pour the cooked glaze over steak. Top steak with scallops and their sauce. Garnish with Parsley.
