Forget turkey sandwiches. After your Thanksgiving feasting has finished, here’s what to do with the leftover bird: Give it a second act as a nourishing soup from chef Johanne Killeen (@johanniejo). 🦃🍜⠀
⠀
Bolstered with Parmesan, capellini pasta, wilted greens and a poached egg, the rich broth provides the sort of soothing you’ll want in the recovery period between holidays. And the whole recipe only takes 20 minutes. ⠀
⠀
Putting turkey to use this way has been a part of Killeen’s holiday routine since she was an art student at the Rhode Island School of Design in the 1970s, when she’d go to a professor’s house the day after Thanksgiving. “I always looked forward to the broth,” she said. ⠀
