My recipe for lip smacking garlicy tator tots - trying to eat light before Thanksgiving/Friendsgiving meals!

2 bags of riced cauliflower (12oz each)
1/2 c. almond meal
1 tsp onion, oregano and garlic powder
Bunch of fresh parsley or Tbsp of dried parsley
1 egg
1/2 c. sharp cheddar cheese
Salt to taste

Cook cauliflower for a few mins until heated thoroughly and water is absorbed. Put cauliflower in mixing bowl and garlic, onion parsley, egg, almond meal and salt. Mix together well and form tator tot size using wooden spoon and hands. Put on parchment paper and bake for 25 mins at 425 degrees. Turn over tots and bake for another 10 mins. Serve with your favorite condiment.
