What a clever idea to use some old bread. Also at least 2k calories in one baking dish ;) Croute au fromage royale seems pretty simillar to croque madame sandwich, however the swiss version uses cheese instead of bechamel sauce. Under the cheese there are slices of some great ham and even more cheese and bread soaked in milk, that absorps all the juices while grilling.
It's rather heavy dish, perfect for wintertime, if you're not planning to go for hike after or before, you might get defeated. But it's so delicious that it's worth to fall into little #foodcoma, especialy when you're visiting the beautiful Land of @myswitzerland.
