the Trapani pesto is prepared with fresh tomatoes, Trapani oil, red garlic (from Nubia) in industrial quantities, basil, chopped together. Once seasoned the pasta is sprinkled with toasted and coarsely chopped almonds and grated Sicilian pecorino (as if it were raining !!) ... ?

This is one of our favourite weeknight family meals. Even the caper and anchovy hating youngest loves it. I make extra because the leftovers are divine eaten cold (usually standing at the fridge for a sneaky snack).

@baska_kovalcik Trapanese is a style of pasta sauce, not really the pasta shape. Good on any pasta ?. ? Yum!
