Heat a large skillet over med high heat. When hot, add cooking fat (I used pork lard for extra flavor!). Add onions and cabbage first. Sauté for about 5 minutes, then add zucchini. Cook another 5 minutes or so, then add kale and garlic herb salt. Stir veggies and cook another 5 minutes. Using the back of a spoon, create 6 little wells for the eggs. Crack an egg in each well, then place skillet in oven and cook for about 7-8 minutes or until egg whites are set and turn opaque. Season with more garlic herb salt if desired. I always top mine with red pepper flakes and chopped cilantro.
